Irish Potato Candy |
Easy Peanut Butter Cookies |

Boil potato until soft, peel and mash. Add sugar until stiff enough to roll flat. Spread surface with peanut butter. Roll, chill and slice. |
Mix all ingredients with a spoon. Put on ungreased cookie sheet by spoonfuls. Press down with a fork. Bake for about 15 minutes in a 350-degree oven. Makes 2 dozen. |

Pioneer Potato Candy |

Combine potatoes, salt and vanilla in a 4 qt. mixing bowl. Sift over potatoes - stirring and adding about one cup at a time. Mixture will liquefy when first sugar is added. Then will gradually begin to thicken. When it reaches the consistency of dough - knead, even if all sugar is not used. After kneading - cover with a damp cloth. Chill until a small spoonful can be rolled into a ball. Shape in l inch balls. Dip balls in chocolate that has been melted in a double boiler. Roll in peanuts. Makes about l00 balls. |
