Potato Candy Peanut Butter Cookies
           
  • When you want scrambled eggs, add water instead of milk, they make fluffy eggs!
  • To fry your chicken or pork chops, first dip them in beaten egg (with water added, if needed), then use instant mashed potato flakes to coat. Delicious for everyone!
  • When you want to have real mashed potatoes, use low fat margarine (which has no milk) and chicken broth to make yummy mashed potatoes!
  • To fry fish, dip them in beaten egg and then coat in plain corn meal and seasonings. That's country style!

Everyone's Favorite Food - PIZZA!

Use corn tortilla shells as the base. Put on a cookie sheet. Spread a pizza sauce on them. Add your favorite toppings like pepperoni, bacon and ham. Shred your soy or rice mozzarella-like cheese on top. Bake in a moderate oven for about 10 minutes. Cut and enjoy like everyone else!  Note: Pepperoni may have casein (dairy). Vegan pepperoni may be OK.

TACOS

Use corn tortilla shells with the taco meat, refried beans or pinto beans, if desired, soy or rice cheddar-like cheese, lettuce and tomatoes. Eat with salsa and corn chips and have fun!

Treats and Sweets

Irish Potato Candy
  • l small potato
  • l 1/2 boxes powdered sugar
  • l small jar peanut butter

Boil potato until soft, peel and mash. Add sugar until stiff enough to roll flat. Spread surface with peanut butter. Roll, chill and slice.

Easy Peanut Butter Cookies
  • l cup peanut butter
  • l cup sugar
  • l egg, beaten
  • l tsp. Vanilla

Mix all ingredients with a spoon. Put on ungreased cookie sheet by spoonfuls. Press down with a fork. Bake for about l5 minutes in a 350-degree oven. Makes 2 dozen.

Pioneer Potato Candy
  • l cup warm, unseasoned mashed potatoes
  • 1/2 tsp. salt
  • 2 tsp. vanilla (some vanilla's may include dairy)
  • 2 # powdered sugar
  • # dipping chocolate or semi-sweet chocolate
  • 2/3 cup ground salted peanuts, optional

Combine potatoes, salt and vanilla in a 4 qt. mixing bowl. Sift over potatoes - stirring and adding about one cup at a time. Mixture will liquefy when first sugar is added. Then will gradually begin to thicken. When it reaches the consistency of dough - knead, even if all sugar is not used. After kneading - cover with a damp cloth. Chill until a small spoonful can be rolled into a ball. Shape in l inch balls. Dip balls in chocolate that has been melted in a double boiler. Roll in peanuts. Makes about l00 balls.
