Warning about fast food fries:  McDonald's fries aren't dairy and gluten free anymore.  The oil has dairy and gluten.  The Burger King onion rings and fries and the Arby's, Hardee's, and Wendy's fries include wheat.  The Captain D's fries are okay, but not the country style fish (it's made with flour) and the hushpuppy too and also the batter fish is made with milk.

A very good dairy, casein, and gluten free milk can be found at vancesfoods.com, which has a great and creamy taste!  It is also fat-free, cholesterol free, lactose free, soy free, corn free, no rice or oils and is low in sugar.  It is also high in calcium, contains the same amount of calcium as in cow's milk.  If you need to lose weight, this would be an excellent alternative to cow's milk or even skin milk.  They also have a Chocolate Dairy Free Milk mix.

vancesfoods.com also has information on dietary intervention for autism and asthma.  The site also has recipes and lists cookbooks for cooking without dairy, wheat, eggs, and yeast.  There is also a free publication called "Your Life Publication: Focus on Autism."

Warning about Rice Dream:  I want to warn you that technically Rice Dream isn't gluten free.  Going by the manufacturers website for Rice Dream at www.imaginefoods.com under the last Frequently Asked Questions, it says "Rice Dream Beverage is processed using a barley enzyme.  Even though the barley enzyme is discarded after use, the final beverage might contain a minute residual amount (less than .002%) of barley protein."  Barley is classified as gluten.

The Vance's Foods dairy and gluten free milk could be found in health food and specialty food stores, supermarkets or convenience stores, or you could ask them to order it for you or you can order it off of their website, vancesfoods.com.  The name of the milk is DariFree.  Also I recommend getting the 2 Quart Mixer/Server/Pitcher, which can be ordered from Vances Foods.

Imagine Foods manufacturers dairy free gluten free ice cream called Soy Dream and Rice Dream.  It lists flavors of the Rice Dream ice cream and Soy Dream ice cream that are gluten free.  There are also pages that list their dairy free products, soy free, corn free, peanut free, and vegan products on separate pages at ImagineFoods.com, click on Info Center.  They also have recipes on their site.

Here are some tips and recipes: (click here for a print friendly version of just the recipes & tips below)

  1. When you want scrambled eggs, add water instead of milk, they make fluffy eggs!
  2. When you want to have real mashed potatoes, use low fat margarine (which has no milk) and chicken broth to make yummy mashed potatoes!
  3. To fry your chicken or pork chops, first dip them in beaten egg (with water added, if needed), then use instant mashed potato flakes to coat. Delicious for everyone!
  4. To fry fish, dip them in beaten egg and then coat in plain corn meal and seasonings. That's country style!
  5. Pizza: Use corn tortilla shells as the base. Put on a cookie sheet. Spread a pizza sauce on them. Add your favorite toppings like pepperoni, bacon and ham. Shred your soy or rice mozzarella-like cheese on top. Bake in a moderate oven for about 10 minutes. Cut and enjoy! Note: Pepperoni has casein (dairy). Vegan pepperoni may be OK, but check the ingredients and look up or question unknown ingredients. (Of course you can use just ham and/or bacon as a topping.)
  6. Tacos: Use corn tortilla shells with the taco meat, refried beans or pinto beans, if desired, soy or rice cheddar-like cheese, lettuce and tomatoes. Eat with salsa and corn chips and have fun! Note: Some taco seasons have wheat. Check the ingredients.

TREATS & SWEETS RECIPES

Pioneer Potato Candy

Combine potatoes, salt and vanilla in a 4 qt. mixing bowl. Sift over potatoes - stirring and adding about one cup at a time. Mixture will liquefy when first sugar is added. Then will gradually begin to thicken. When it reaches the consistency of dough - knead, even if all sugar is not used. After kneading - cover with a damp cloth. Chill until a small spoonful can be rolled into a ball. Shape in l inch balls. Dip balls in chocolate that has been melted in a double boiler. Roll in peanuts. Makes about l00 balls.

Irish Potato Candy

Boil potato until soft, peel and mash. Add sugar until stiff enough to roll flat. Spread surface with peanut butter. Roll, chill and slice.

Easy Peanut Butter Cookies

Mix all ingredients with a spoon. Put on ungreased cookie sheet by spoonfuls. Press down with a fork. Bake for about 15 minutes in a 350-degree oven. Makes 2 dozen.

Rice Krispy Treats - use the recipe on the box, but use no-milk margarine. Note: Rice Krispy may include barley flavoring, or malt flavoring, which are both gluten. Check ingredients.

Rice Cakes - Flavors that are milk free can be eaten by spreading peanut butter and/or jelly on them. Note: Some Rice Cake Brands or kinds include wheat and/or dairy. Always check the ingredients.
